There are several ways to harvest olives. The easiest to get right into and do is simply picking the olives by hand and placing them in a bag that is worn about the neck. Rakes are sometimes used to comb the trees and cause the olives to fall to the ground. In large operations, machines are sometimes used that shake the entire tree and cause the olives to fall en masse. The best method for premium olive oil is the one that causes the least amount of bruising to the fruit, as this can affect the quality and taste of the oil that they produce. The olive tree is intimately tied to the history, economy, and culture of many Mediterranean countries.
