I love to experience the local cuisine when I travel, but sometimes as a vegan, you can’t just dive right in and try something if you’re not sure what’s in it! For this reason, I was really happy when I discovered a vegan Thai cooking course when I visited Chiang Mai
earlier this year.
Thai food is of course quite easy to veganise if you use tofu instead of meat and substitute fish sauce with soy sauce. Our instructor, Nim, expertly and patiently guided us through the steps to creating all the basics of northern Thai cuisine.
As well as learning how to make red chilli paste from scratch (a staple ingredient in many Thai dishes) she showed us how to accurately measure out a “Thai lady hand” of chopped vegetables, explained the regional differences in the dishes we were making and even taught us a smattering of Thai in the process!
