I like to see things straight – I don’t drink a paradox!If grape juice weren’t rich in sugar and water as it is, wine wouldn’t exist. At the heart of wine is alcohol, but its consumption passes through rich and complex filters of culture, technique, history, (aesthetics even) all resting on the sure human and sensual foundation of the desire to share. As an œnologist, it is the way that wine bears magnificently these superimposed resonances and implications that fascinates me.
Vines are beautiful, everywhere and through every season. From the level of the sea to the abrupt slopes of volcanoes. The trimmed winter stocks, lined up like brave little soldiers, the tender green of the early spring leaves, the flowers that smell so good in May and the promising grapes ripening as the summer ends.
